Southern Homestyle Fries

Ingredients

  • 2 medium or one large potato
  • ¼ cup bell pepper (any color)
  • ⅛ cup or 2-3 tablespoons of onion
  • 1 tablespoon chopped garlic (preferably fresh)
  • ¼ teaspoon seasoned salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • Or 1 teaspoon if fresh garlic not available 
  • 1 cup of oil (or enough to coat entire pan bottom) 
  • Parsley Flakes for decorations

 

Directions

  1. Wash potatoes thoroughly. 
  2. Cut potato into chunks or large flat slices. (the bigger they are the longer it takes to cook them, vice versa)
  3. Rinse potatoes again to clean off the starch after cutting.
  4. Gather onion, bell pepper, and garlic, give it a rough chop. 
  5. Add vegetables to a large mixing bowl with potatoes. 
  6. Season with seasoned salt, black pepper, and garlic powder.
  7. In a pan (with a matching lid) put the oil in the pan and turn heat on medium. Wait for the oil to heat up for about 3 minutes. 
  8. Then pour all the potatoes and vegetables in the pan. 
  9. Stir gently to prevent sticking and cover the pot with the lid. 
  10. Let potatoes cook for four minutes or until the bottom is half cooked. (Then stir the pan this will allow anything on the top to go to the bottom.) 
  11. Cover again for at least 5 minutes or until the fork can go through the potato completely without force. If you want potatoes softer cover and cook until desired softness. 
  12. When done, turn the heat off and remove the potatoes from the pan. Place potatoes on a dish lined with paper towel
