Ingredients
- 2 medium or one large potato
- ¼ cup bell pepper (any color)
- ⅛ cup or 2-3 tablespoons of onion
- 1 tablespoon chopped garlic (preferably fresh)
- ¼ teaspoon seasoned salt
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder
- Or 1 teaspoon if fresh garlic not available
- 1 cup of oil (or enough to coat entire pan bottom)
- Parsley Flakes for decorations
Directions
- Wash potatoes thoroughly.
- Cut potato into chunks or large flat slices. (the bigger they are the longer it takes to cook them, vice versa)
- Rinse potatoes again to clean off the starch after cutting.
- Gather onion, bell pepper, and garlic, give it a rough chop.
- Add vegetables to a large mixing bowl with potatoes.
- Season with seasoned salt, black pepper, and garlic powder.
- In a pan (with a matching lid) put the oil in the pan and turn heat on medium. Wait for the oil to heat up for about 3 minutes.
- Then pour all the potatoes and vegetables in the pan.
- Stir gently to prevent sticking and cover the pot with the lid.
- Let potatoes cook for four minutes or until the bottom is half cooked. (Then stir the pan this will allow anything on the top to go to the bottom.)
- Cover again for at least 5 minutes or until the fork can go through the potato completely without force. If you want potatoes softer cover and cook until desired softness.
- When done, turn the heat off and remove the potatoes from the pan. Place potatoes on a dish lined with paper towel
