Easy Southern Fried Fish

Hey y’all, welcome back!

I wanted to share with you an easy foolproof way to make fried fish. Fish and grits is a staple meal in a black household and honestly my personal favorite brunch choice. Frying fish isn't a science but inside a feeling. If you feel the grease (oil in which you are using to fry with) is too hot or too cold adjust the temperature. The best way to master your technique is to practice but I'll give you some of my tips I learned along the way. 


I would suggest using basic oil, canola or vegetable works best. Before adding anything to the fish pat it completely dry. If not the batter will not stick and come off while frying. Also use a cast iron or deep fryer for best results. You need something to hold and distribute heat evenly. Your temperature should be between 355-375. Anything lower or higher is bad. Temps lower will lead to greasy soggy fish. Anything higher will lead to burnt dry fish. If you're using a stove this temperature would be 1-2 nodules past medium heat depending on pan size. Whether you're using a deep fryer or cast iron pot you want the grease to seem like it’s piping hot - right before it starts smoking to add the fish. To test take a pinch of flour and drop it in the pan if it fries immediately and turn crispy. It's ready if not let the grease heat longer.

Ingredients


6 fish fillets 

4-5 tablespoon mustard

1 tablespoon SCG No Salt Seasoning Salt

1 tablespoon SCG Garden Garlic Onion + Herbs

1-2 tablespoons lemon pepper seasoning

1-2 tablespoon SCG Salt + Black Pepper

Cooking Oil enough to cover fish


Fish Fry/Batter

2 cups flour

1 - 1 ½ cups cornmeal fine

3 tablespoon SCG No Salt Seasoning Salt

3 tablespoon SCG Garden Garlic Onion + Herbs

3 tablespoon lemon pepper seasonings

3-4 tablespoon Salt + Black Pepper

Directions

 

  1. Combine all ingredients for fish fry in a bag, set to the side.
  2. Clean your fish and pat completely dry. 
  3. Massage mustard into fish. I used spicy brown mustard. Season fish with all seasonings.
  4. Coat fish with fish fry. Add to a dry plate and set aside.
  5. Heat oil in a skillet on medium high heat. 
  6. Add fish to skillet and fry until golden brown on both sides. May take 5 minutes on both sides.
  7. Remove fish and add to a paper towel lined plate. 
  8. Serve immediately.
